By grinding the durum wheat Senatore Cappelli, grown in the regions Marche and Umbria, we obtain a partially whole wheat durum semolina flour that is rich in proteins and fibers, perfect for making a unique kind of pasta.
Not only our pasta is made with a quality ingredient such as our semolina flour, but we also use bronze die plates and dry it very slowly (24h/48h) at low temperatures (42°C-48°C or 107°F-118°F).
Moreover, the bronze cut make Pasta Centioni excellent at holding the seasoning you choose for your recipe, even though the pasta has a special taste itself.
