Harvest: there are 5 different types of grapes and each has its own maturity and is harvested at different times. Once the right degree of phenolic and sugar maturation has been reached, the grapes are harvested by hand, placed in boxes, and immediately transported to the cellar to be perfectly processed.

Vinification: the grapes are de-stemmed and slightly crushed. Subsequently, the wounded is conveyed to the small capacity fermenters and joined by a reassembly system, to start the alcoholic fermentation at controlled temperature. The maceration on the skins lasts for about 250 days at a temperature of 20 °, after which the wine is drawn off and aged in steel. After 1 year of aging in steel with continuous remuage and after carrying out malolactic fermentation, the wine is put for 1 year in large wooden barrels of 10 hl. The wine is then bottled and left to rest for at least 1 year in the bottle.
