Stringhette Regina dei Sibillini or Macaroni on guitar, long, rough, square.
In ancient times they were prepared by pressing the dough on a wooden tool equipped with taut and parallel metal wires, similar to those of a guitar: hence the name of macaroni on the guitar. In the Macerata area they take the name of stringhette, to remember the leather laces, the strings, which closed the boots of the mountaineers in past eras.
