Harvest : Grapes harvested by hand, placed in small containers, and transported to the cellar immediately to be worked. Harvesting occurs early in the morning or late afternoon to avoid hot weather. In the collection, dry ice is used to inert the grapes from oxygen and to lower their temperature.

Vinification: the must is first thawed in cold for maximum cleanliness. Once the must has settled, the fermentation begins. The fermentation takes place through selected yeasts in steel tanks at a controlled temperature of about 10-12 ° for about 20 days. Once the fermentation is over, the turbid wine comes in perfectly clean tanks to unlock. The wine is removed from heavy fermentation lees and left on fine lees.
The refining takes place in steel with continuous "remuage" of the product to extract positive properties from fine lees. During the February period the wine is clarified, filtered and bottled. Releases in March after harvest.
