Pecorino di fossa PDO, obtained respecting an ancient custom of seasoning the cheese in tuff caves, has an aromatic taste and fragrant flavor, intense and pleasant, slightly spicy; the smell is intense and persistent, rich in aromas reminiscent of the undergrowth with hints of mold and truffle.

Ingredients: pasteurized sheep's milk, salt, rennet, selected lactic leak stopping. Preservative-free: edible rind. Origin of milk: Italy.

Shape weighing about: 1 Kg. (+/- 7%)

The pit is an underground environment, dug into the tuff, in the shape of a flask, measuring about 4/5 m deep and 2 in diameter.

The cheeses, made from sheep's milk, are placed in the pits in white cotton sacks, after a period of maturation in the cold storage of at least 60 days; once filled, the same pits close with boards and pebbles walled with lime or plaster, to wait for the reopening, which the peasant tradition dates back to the month of November, on the day of Santa Caterina.

The three months of seasoning in particular conditions of temperature (16 ° - 17 ° C) and relative humidity (98%) modify the organoleptic and aromatic characteristics of the cheese, and the weight, which is reduced by about 20%.
