The new frontier of wine sector is producing wine without added sulfites.

Classification: Verdicchio dei Castelli di Jesi Doc Classico Superiore

Grapes: Verdicchio 100%

Location: the Marche, province of Ancona, communes of Rosora and Castelplanio.
Soils: alluvially-deposited seabed sediment, predominantly clay, sand, silt and high content of lime.
Aspect and elevation: South-east, South-west at 250-350 m.
Vineyard density: from 2.220 to 3.500 vines per Ha..
Yield: 8-9 t. of grapes controlled through bud reduction and cluster-thinning at veraison.
Training system: vertical trellising and guyot.

Vinification: crushing and de-stemming by using dry ice (carbon dioxide), soft pressing, fermentation at temperature controlled without using sulphites during all production operations. Maturation: the wine matures 2 months “sur lie” in steel, then bottle-ages in temperature controlled storage.

Alcohol: 14,00 % vol. - Total acidity: 5,70 g/l - Residual sugar: 1,00 g/l
