Vinification process Cold processing grapes, fermentation macerations in amphora with skins of at least 4 months.
Wine fining In anphora with batonnage for about 6 months

Organoleptic examination
Golden yellow hue. Articulated olfactory frame with mature smells and refreshing notes, shell fruit, cucumber and green tea, candied fruit, anise and hay. Good progression to the palate, where amphora maceration enriches and projects on mature tones. The percentage of Passerina partially soften the acidity and minerality that return to the final. Intended to evolve positively.

Food pairing Gratin of mussels, smoked fish, oily fish sauce, fish grilled, “frascarelli”, “passatelli” in broth, meat stew.
