Vinification: after de-stemming, the grapes are conveyed into 100 HL fermenting vats that favor the perfect spraying of the cap during fermentation. This system ensures a greater and more uniform contact between must and skins, increasing the extraction of polyphenols. The maceration times can exceed four weeks, time invested to obtain the best results on the final product. After fermentation, the wine is placed in new barriques, where it remains in refinement for about 16 months.
