The SALAME DEL PRIORE is made with pork shoulder meat or (fraculo) and pork loin ground in pieces, after tanning the dough is left to rest in maceration with red wine and then stuffed.

It is a salami that hardens easily so it must be seasoned and maintained in a workmanlike manner.

Produced with local semi-wild pigs, in strict respect of local traditions; selection of raw materials, care of production rules and skilful seasoning with natural air in the cellars of Visso.

Ingredients: pork, pork fat, salt, dextrose, garlic, white wine, flavorings, spices and pepper. Preservatives: E-252 E-252 / Antioxidants: E-300 E-301 / Gluten-free and lactose-free.

The Pettacci-Tarragoni family has been running this small business in the town of Visso for about 90 years.
