Pelago is the result of the insight of our technical group, who had the idea of mating Montepulciano with Cabernet Sauvignon. It is a wine which retains the style and personality of the indigenous grapes while broadening its aromatic profile and complexity by adding qualities of the Bordeaux style of wine. To maintain a high standard of quality, we chose to produce it only in those years which provided grapes suitable for a fine wine.

History:The name Pelago, deriving from pelagos, meaning sea in ancient Greek, suggests its marine character and the special qualities of taste and aroma which are typical of wines produced near the coast.

Production area: the town of Osimo (AN), on a hill about 150 meters above sea level, facing south-east. The land, which dates back to the Plio-Pleistocene marine formations, is very deep, Franco-clay, very calcareous. The yield is limited by very short pruning and targeted thinning, and can vary depending on the season, 50 to 60 per hectare

The harvest is done by hand, the grapes are harvested and transported in boxes. It starts at the beginning of September with the Merlot, continues at the end of the month with the Cabernet Sauvignon and ends with the Montepulciano grape variety rather late in the second half of October, when the grapes have reached an advanced degree of phenolic ripeness

Winemaking grapes de-stemmed and lightly crushed, then fermented at 27-29 ° C in stainless steel tanks, submerged cap for 14-15 days on indigenous yeasts. After malolactic fermentation, the wine is transferred to the stage of aging in oak barrels of 225 liters. for a period of 14 months
After bottling, Pelago further, in a temperature-controlled environment, for about 12 months

Winemaker's notes
From Impenetrable ruby ​​red color with purple hues
On the nose aromas are released intense, clean and refined: spicy fragrances of coffee, black pepper, licorice and tobacco open on a background of grass and hay, typical of Cabernet
In the mouth, the impact is of berries, vanilla and mineral aromas, tannins but developed with taste sensations in harmony with his great body

Pairings: It goes perfectly with red meats, game birds and mature cheese. Ideal serving temperature 18-20 ° C.

Serving glass: goblet of large size, with a rather wide body to allow a proper oxygenation of red wines, long aging in bottle and with tannins that have already taken a softer character, developing complex and tertiary aromas, which will be concentrated in ' narrower opening
