Harvest and Fermentation: Early grape harvest, sugar levels must be low and acid levels high. The juice of harvested grapes is pressed off quickly, to keep the wine white.
The first fermentation converting the natural sugar of the grapes into alcohol while the resultant carbon dioxide is allowed to escape. After primary fermentation, and bottling, a second alcoholic fermentation occurs in the bottle. The wine is aged in cellar for three years before disgorgement.

Bouquet: fairly intense, elegant and typical. Slight touch of bread crust, ripe fruit, dried fruit with reminiscence of toasted hazelnuts and almonds.
Taste: dry, warm, fairly soft, fresh with good taste, good body, balanced. Good persistence to the palate and to the nose which confirms the elegant notes perceived by the nose,

Matchings: This is a wine for the whole meal, it matches happily with fish and meat, hors d’oeuvres, cold meats and salami, first corse with fish and shell fish sauces, fried fish Italian style, boiled fish, salted or baked in the oven.
