Organoleptic examination
The eye is satisfied with a dense and at the same time lively chromaticity. Let the huge bouquet open!
On the nose, moist earth, fluid wild myelosity from the Sibyl meadow mix. Rosemary, sometimes sage and sometimes oregano. Light leather freshly cut. Classic red fruits such as ripe California plum, blackberries and Vignola cherry.
On the palate, tannins in absolute balance between astringency and softness, elegantly accompanied by the velvet of the rich sugar alcohols. The predominant sweetness, exhausted its charge, leaves room for a saline freshness. A meditated alcoholic heat sustains the sumptuous structure guiding a persistence where the fruit returns unexpectedly.

Pairings: Roasted guinea fowl wrapped in bacon.
Serving temperature 16/18 ° C
