Ingredients: Onion, olive oil, previously soaked beans, pork rind, tomato sauce, celery, carrot, salt.
Preparation: After boiling the pork rinds, thoroughly cleaned, in hot water, until they are tender, prepare a sauté with olive oil and onion. Then pour the pork rinds into the sauté and add two or three ladles of tomato puree, the celery and the carrot in pieces. You salt and cook until you get a thick sauce. Finally the beans are added, previously kept in the water for at least 15 hours, rinsed and boiled in salted water, and they are seasoned for another 10 minutes. Serve with toasted bread.
